Whole30 Day 2: Chicken Apple Breakfast Sausages

Day 2 didn't feel much different this morning. I was really wanting some Starbucks this morning because of this dreary weather, so instead I experimented with heating a little coconut milk and whisking in some cocoa powder. Not exactly what I was craving, but it put the demons to rest. Try it if you are having the same problem!

BRUNCH:
Leftover chuck roast reheated
Small baked sweet potato w/ghee and cinnamon
Steamed mixed veggies

LUNCH:
3 Roast Beef Roll-ups
(thick sliced roast beef filled w/guacamole and cherry tomato halves)
Carrot sticks
Mixed berries

POST WOD SNACK:
Mixed nuts

DINNER:
Foil Chicken Pack (sweet potatoes and peppers)
Asparagus and lemon-dill sauce


FedExMan is my hero. He dropped my copies of 'It Starts with Food' and 'Well Fed' on my doorstep yesterday and I have had time today to do a little reading. 'Well Fed' is such a cool cookbook. I highly recommend getting a copy!

Are you struggling today? It's evening and dinner time and I am. Day two is when the struggle sets in. See below and remind yourself of this later and the next day when you are looking like an ax murder with that spoon about to dive into a carton of ice cream. This is also known as the 'Carb Flu'. Like the real flu, it takes about a week to pass. So if your mood/workouts/life just feel like total ca-ca right now, hang in there. You are stronger than a box of Little Debbies.



CHICKEN AND APPLE BREAKFAST SAUSAGE PATTIES
(Adapted from Rachael Ray's 30 Minute Meals)

1 Tbsp ghee
1 small green apple finely diced
1 small onion diced
Salt and pepper
1 tsp fennel seed
1 1/2 lb ground chicken (I use ground skinless thigh meat)
1 1/2 tsp poultry seasoning
1 tsp allspice
1 tsp paprika
EVOO for drizzling

Heat a small skillet over medium heat. Add ghee and melt. Add apples, onion, S&P, fennel. Saute mix for 5 minutes or until soft and remove from heat to cool

Heat a large skillet or griddle over medium high heat.

Mix chicken and remaining ingredients in a bowl and add drizzle of EVOO. Then add in apple saute mix. Mix with hands and form into size of small balls and then flatten between palms and cook on griddle about 4-5 minutes each side, or until brown on outside and juices run clear. Remove from heat and serve immediately or allow to cool and then store in air tight container and place in freezer. Yields about 14 patties.

  1. Where do u buy ghee? Can u get BCAAs allowed here? I am feeling the hangover lil bit. Thoght it was 6pm only 2. Maybe the weather. Sore from yesterdays WOD. Feel like I need another week off haha.. c yall manana
